Once again, 5pm came and I had nothing planned for dinner…what’s wrong with me? What kind of stay-at-home-Mom am I? We tend to eat dinner…oh you know…every night. I really should have this all figured out…have a system, a spreadsheet, something. It seems, my system is totally losing track of time. Sigh! Oh well…no time to beat myself up, it was dinner time. I was going to hear whining if I didn’t act quickly. Could this crazy electric pressure cooker deliver again? I’d said to my oldest son earlier in the day that beans and rice sounded good to me today. Sad Admission: I have a 5 gallon bucket full of dried red beans in my pantry. I’ve had it a few years (don’t worry it’s in a long term food storage bucket…and no, I’m not mormon), I’ve used them only once. That once they turned out awful. You know why? Because I underestimated how much time it would take. Hmmm….sensing a theme? I promise, that time though, I’d planned ahead and rinsed, soaked and cooked them for hours. Not enough hours though. They were still inedible come dinner time. So could this really REALLY be doable? Dinner on the table quickly starting with dried beans? Seems downright laughable.
I quickly googled recipes for red beans in the Instant Pot. Turns out most dried beans recipes still recommended to soak them overnight before pressure cooking. UGGHH!! But the black beans I put in the soup the other night worked, there was that. Why not these? I was going for it! I mean, for real, I had plenty of red beans to experiment with. If they failed….cereal night! We were already on track for that, nothing to lose at this point.
