Prime day?? Who knew this was a thing. I didn’t. But I started seeing all over my Facebook newsfeed in RV groups, homeschool groups, Mommy groups and individuals that the InstantPot was at one of it’s lowest deals “that day only” Prime day. I don’t even know what that is. But… ACK! I’ve fought getting one of these contraptions for 2 years.
I put it in my cart….and left it there…all day (this…prime day). Really? Even at $69 was it worth it? Did I REALLY need this thing? Was 6 qt going to be big enough for my family? Would I really use this thing? I mean I want to declutter, not ADD clutter. UGH!
But I’d regretted it the other times Amazon had marked it down. Every. single. time. So in the end….I clicked “purchase now”

The day it arrived I had a 3 yr old with 105 fever. The next day, he was puking in addition to the fever and would not let anyone touch him but me, and didn’t want me to leave his side. But my hubby had just gotten back into town after a week away on business. He was exhausted and fighting a sinus infection. Feeling crummy. My two teens both had ear infections. Only the 5 year old was feeling (exhaustingly) super. So I couldn’t force them to eat cereal, or get take-out. I needed a comforting meal…fast! The baby had fallen asleep. Not so soundly. I had minutes. What could I do? Oh yeah…the “IP” Hmmm…could it REALLY deliver? time to find out.

I threw in 2 frozen chicken breasts, dried black beans (rinsed), some chopped up onions, a can of tomatoes with green chilis, some herbs & spices (cumin, salt, cilantro, red pepper flakes, etc) and about 4-5 cups of chicken broth.
Put it on manual for 35 min….doubting the entire time…but in the end we had a delicious pot of chicken tortilla soup! For REAL?? DRIED BEANS! Cooked perfectly. Total insanity. No more need for canned beans…at all! Then I pulled it out and put in a cup and a half of rice and a cup and a half of water in my extra insert that ordered Pushed the rice button and we had rice to put the soup over. WOW!! The soup tasted as if it had simmered a couple hours. Sorry no picture…baby was needing me to hold him, so you’ll just have to trust me!
